I am a vegetarian. My whole family isn't. It's mostly just me. However, I am the one that is in charge of breakfast and dinner so I want to make inexpensive yummy healthy meals for my children, my husband and myself to start our day off on the right note. One of those ways is for me to avoid bad sugars at all costs, otherwise I go about the day feeling hungry more often, and I end up craving more and more sugar, and despite what some current scientific studies suggest, my children do get more hyper on a sugar rush. And even if they didn't sugar isn't good for you anyway, however 'they' say we need five servings of fruit and veggies a day, so I try to include those kinds of sugars. And what about protien? Fiber? Here is my recipe, the one that seems to be good all the way around:
Carrot Cake Oatmeal
- a few carrots
- an apple
- half a cup chopped almonds
- 2 ts. of vanilla extract ( to taste)
- 1 or 2 ts. cinnamon (to taste)
- 1 cup of raisins
- 4 cups of rolled oats
- boiling water enough to cover the ingredients.
And I think that about sums it up. Grate the carrots until you have a cup of carrot (its preferable to use the smallest grating option you can), chop the apple up, too. Add all ingredients
except almonds and let cook for about five min. or until the oatmeal is to the desired texture. When it is done add the almonds. Add your favorite milk and butter if you desire. Also, some people may like to add a lil' bit of nutmeg to the recipe. I didn't have any on hand so I didn't try it. I hope you like this!!
